Instructions

  1. Prepare the Fish:

    • Cut the Mujair fish into two halves and wash thoroughly.
    • Slice each half into three pieces along the sides.
    • Rub the fish, both inside and out, with the crushed garlic and a generous amount of salt.
    • Set aside and let it marinate while you prepare the sambal.

    • Grill the red chili peppers, bird’s eye chilies, shallots, kencur, and ginger until they are lightly charred and aromatic. This step adds a depth of flavor to your sambal.
