  • 4 shallots (bawang merah)
  • 4 garlic cloves (bawang putih)
  • Palm sugar (gula merah) to taste
  • Salt to taste
  • Seasoning (penyedap rasa) to taste

Instructions

  1. Prepare the Eggs:

    • Place the chicken eggs in a pot and cover with water. Bring to a boil, then reduce the heat and simmer for 15-20 minutes.
    • Once cooked, transfer the eggs to a bowl of cold water. This will make peeling easier. After cooling, peel the eggs and set aside.
  2. Prepare the Spice Paste:

    • In a mortar and pestle or food processor, blend the red curly chilies, red birdโ€™s eye chilies, tomatoes, shallots, and garlic until you achieve a smooth paste. If using a blender, you may need to add a small amount of water to facilitate blending.
  3. Fry the Eggs:

    • Heat oil in a pan over medium heat. Gently add the peeled eggs and fry until the skins are lightly golden and crispy. Be careful not to overcook them; the goal is to achieve a crisp exterior while keeping the eggs inside intact. Remove the eggs from the oil and drain on paper towels.
  4. Cook the Spice Paste:

    • In the same pan, remove excess oil, leaving just a small amount. Add the spice paste to the pan and cook over medium heat. Stir frequently until the paste becomes aromatic and the oil starts to separate from the spices.
  5. Combine and Season:

    • Once the spice paste is cooked, add the fried eggs to the pan. Stir gently to coat the eggs with the paste. Season with palm sugar, salt, and seasoning to taste. Continue to cook for a few minutes, allowing the flavors to meld and the eggs to absorb the spice mixture.
  6. Serve:
