This recipe will guide you through making this delicious and unique dish that is perfect for any meal.

Ingredients:

  • 500 grams beef sirloin or beef heart, cut into cubes
  • 500 grams large red chilies
  • 2 stalks petai (stink beans)
  • 3 bay leaves
  • 2 slices of galangal
  • 3 lime leaves
  • 3 stalks lemongrass
  • 1/2 tablespoon sweet soy sauce (kecap manis)
  • Tamarind paste, to taste
  • 5 shallots
  • 5 garlic cloves
  • Salt and pepper, to taste
  • Cooking oil

Instructions:

  1. Prepare the Beef:

    • Boil the beef cubes in a pot of water until fully cooked and tender. Once cooked, drain and set aside.
  2. Prepare the Spices and Aromatics:

    • Blend the shallots and garlic cloves into a smooth paste using a blender or food processor.
    • In a separate pan, heat some cooking oil over medium heat. Sauté the shallot and garlic paste until fragrant and golden brown.
  3. Cook the Aromatics:

    • Add the bay leaves, lemongrass, galangal slices, and lime leaves to the pan with the sautéed paste. Stir well to combine.
  4. Add the Petai and Beef:

    • Stir in the petai and cooked beef cubes. Season with salt, pepper, and tamarind paste. Mix well and cook until everything is well incorporated and heated through.
  5. Prepare the Sambel:

    • In a separate pan, fry the red chilies, which have been deseeded and sliced, until they are fragrant and slightly crispy. Blend the fried chilies into a smooth paste.
  6. Combine and Finish:

    • Add the chili paste to the beef mixture. Stir until thoroughly combined and the beef is well-coated with the sambel sauce.
    • Drizzle the sweet soy sauce over the mixture and stir again. Adjust seasoning with additional salt, pepper, or tamarind paste if needed.
  7. Simmer and Serve:

    • Allow the dish to simmer for a few more minutes, letting the flavors meld together. Serve hot as a main dish with steamed rice or as part of a larger meal.
