Indonesian Spicy Smashed Fried Chicken (Sambal Ayam Penyet)
Ingredients:
- Fried chicken (find the marinated recipe in my other recipes)
- Cassava leaves (perfectly paired with boiled cassava leaves)
- 15-20 orange chilies
- 1-2 cloves of garlic
- Hot oil
- Beef-flavored seasoning (Royco)
- Salt
- Granulated sugar (for those who prefer less heat)
- Fried shallots (for garnish)
Instructions:

Prepare the Sambal:
- Rinse the chilies and garlic cloves thoroughly. Roughly grind them in a mortar and pestle.
- Heat the hot oil in a pan and pour it over the ground chilies and garlic in the mortar.
- Season with a pinch of salt, beef-flavored seasoning (Royco), and a bit of sugar (optional).
- Grind again while stirring until well combined. Adjust seasoning to taste.

Serve:
- Smash the fried chicken on top of the prepared sambal.
- Serve hot with plenty of steamed rice and garnish with fried shallots.
- Pair with boiled cassava leaves for a delightful and spicy meal experience.
