Tahu Telur Ceplok with Sambal Granat 🍳😤😤😤

Discover the fiery and flavorful delight of Tahu Telur Ceplok with Sambal Granat, a traditional Indonesian dish that’s sure to excite your taste buds. This recipe blends crispy tofu and fried eggs with a spicy, aromatic sambal granat, perfect for those who enjoy a bit of heat in their meals. Here’s how to make it:

Ingredients:

  • 2 large eggs
  • 6 pieces of Bandung tofu (or firm tofu, cut into bite-sized pieces)
  • 1 bay leaf
  • 1 thumb-sized piece of galangal, sliced
  • For the Spice Paste:
    • 35 bird’s eye chilies (cabe rawit setan)
    • 10 red chilies
    • 6 shallots
    • 2 cloves of garlic
    • 1 ½ candlenuts (kemiri)
    • 1 teaspoon salt

Instructions:

  1. Prepare the Tofu:

    • Rinse the tofu thoroughly under cold water and cut it into your preferred size.
  2. Fry the Tofu and Eggs:

    • Heat oil in a pan over medium heat. Fry the tofu pieces until golden brown and crispy. Remove and drain on paper towels.
    • In the same pan, fry the eggs to your liking, either sunny-side up or cooked through.
  3. Make the Spice Paste:

    • Blend the bird’s eye chilies, red chilies, shallots, garlic, candlenuts, and salt into a smooth paste. You may use a food processor or traditional mortar and pestle for this step.
  4. Cook the Spice Paste:

    • In a pan, heat a bit of oil over medium heat. Add the spice paste, galangal, and bay leaf. Sauté until fragrant and the oil starts to separate from the paste.
  5. Combine Ingredients:

    • Add the fried tofu pieces into the pan. Stir to coat the tofu evenly with the spice paste.
  6. Simmer:

    • Pour in enough water to cover the tofu. Allow it to simmer until the liquid reduces slightly and the tofu is well-coated with the spices.
  7. Add the Eggs:

    • Gently place the fried eggs on top of the tofu mixture. Allow the dish to simmer for a few more minutes so the flavors meld together.
  8. Final Touches:

    • Check the seasoning and adjust to taste. If the sauce is too thin, let it simmer a bit longer until it thickens.
  9. Serve:

    • Once the dish is well-seasoned and the sauce has reduced to your liking, remove from heat. Serve hot and enjoy!

This Tahu Telur Ceplok with Sambal Granat is a perfect example of how simple ingredients can come together to create a vibrant and satisfying meal. Enjoy the rich flavors and spice that bring this Indonesian classic to life! 😋😋
