Title: Spicy Petai Omelette (Telor Dadar Sambel Pete)
Ingredients:
- 2 large eggs
- 1 bunch of petai (stinky beans)
- 2 stalks of green onions
- Salt to taste
- Seasoning powder (Royco or similar) to taste
- A little cooking oil
For the Spice Paste:
- 4 shallots
- 2 cloves of garlic
- 3 bird’s eye chilies
- 3 red chilies
- 1 tomato
- 1/4 block of palm sugar
Instructions:

Prepare the Omelette:
- Heat a little cooking oil in a pan.
- Thinly slice the green onions and mix them into the beaten eggs.
- Season the egg mixture with salt and seasoning powder to taste, then whisk until well combined.
- Pour the egg mixture into the hot pan and cook until set and golden. Once cooked, remove from the pan and cut into pieces as desired. Set aside.

Make the Spice Paste:
- Blend or grind the shallots, garlic, bird’s eye chilies, red chilies, tomato, and palm sugar into a smooth paste.
- Heat a small amount of cooking oil in a pan over medium heat.
- Add the spice paste to the pan and sauté until fragrant.

Cook the Petai:
- Add the petai to the pan with the spice paste.
- Season with additional salt and seasoning powder to taste, then stir-fry briefly until the petai is cooked through but still crisp.

Combine and Serve:
- Pour the spicy petai mixture over the prepared omelette.
- Serve immediately and enjoy!
