Ikan Kembung Sarden (Sardine-Style Mackerel)
Ingredients:
- 1/2 kg fresh mackerel (ikan kembung)
- 1 tomato
- 6 red chilies
- 4 shallots
- 2 cloves of garlic
- Sufficient amount of tomato sauce, sasa (fermented fish sauce), salt, and sugar
Steps:
- Prepare the Fish: Clean the mackerel thoroughly and cut it into pieces according to your preference.
- Prepare the Ingredients: Finely chop the shallots, garlic, and red chilies. Slice the tomato.
- Sauté the Spices: In a pan, sauté the finely chopped shallots, garlic, and red chilies until they are fragrant. Add the sliced tomato and continue to cook until the tomato softens.
- Cook the Fish: Add the mackerel pieces to the pan, ensuring they are well-coated with the sautéed spices. Pour in enough water to submerge the fish completely.
- Season the Dish: Add tomato sauce, sasa, salt, and sugar to taste. Stir well to combine the flavors.
- Simmer and Adjust: Bring the mixture to a boil, then taste the broth and adjust the seasoning if necessary. Reduce the heat to a simmer and cook until the fish is tender and the sauce has thickened.
