Stir-Fried Green Beans with Scrambled Egg (Orak Arik Buncis Telur)

Ingredients:

  • 50 grams (1 handful) of green beans, sliced diagonally
  • 1 egg
  • 2 tablespoons vegetable oil
  • 1 teaspoon chicken bouillon powder
  • 1 teaspoon ground black pepper
  • Salt, to taste
  • A splash of water
  • For the aromatics:
    • 2 shallots, thinly sliced
    • 1 clove garlic, thinly sliced
    • 2 red curly chilies, sliced diagonally
    • 3 red bird’s eye chilies, sliced diagonally

Instructions:

  1. Prepare the Egg:
    Heat the vegetable oil in a pan over medium heat. Once the oil is hot, crack the egg into the pan. Stir and cook the egg until it is fully scrambled and lightly browned. Remove the scrambled egg from the pan and set aside.

  2. Cook the Aromatics:
    In the same pan, add a little more oil if needed. Heat the oil and add the sliced shallots and garlic. Sauté until the aromatics become fragrant and golden brown.

  3. Stir-Fry the Green Beans:
    Add the sliced green beans to the pan with the cooked aromatics. Stir-fry for a few minutes until the beans start to soften.

  4. Combine Ingredients:
    Return the scrambled egg to the pan with the green beans. Add the chicken bouillon powder, ground black pepper, salt, and a splash of water. Mix well to combine all the ingredients.

  5. Finish Cooking:
    Continue cooking until the green beans are tender, the flavors are well combined, and the water has evaporated. Stir occasionally to ensure even cooking.

  6. Serve:
    Transfer the stir-fried green beans with scrambled egg to a serving dish. Enjoy warm as a flavorful and satisfying side dish or a light main course.
