Steamed Spicy Beef and Tofu Wraps

Tum Sapi Ala Yuliana

Ingredients:

  • 100 grams ground beef
  • 8 slices of tofu
  • 2 stalks of lemongrass, finely chopped
  • 1 egg
  • 6 shallots
  • 3 cloves of garlic
  • 1 large chili pepper
  • 10 small chili peppers
  • 1 segment of turmeric
  • 1 segment of kencur (aromatic ginger)
  • 1 tablespoon coriander seeds
  • 2 candlenuts
  • 1 sachet Masako seasoning
  • 1 tablespoon sugar
  • Salt to taste
  • Banana leaves for wrapping

Instructions:

  1. Prepare the Tofu and Beef: Mash the tofu and mix it with the ground beef in a large bowl. Add the finely chopped lemongrass and mix well.
  2. Blend the Spices: In a blender or mortar and pestle, blend the shallots, garlic, large chili pepper, small chili peppers, turmeric, kencur, coriander seeds, and candlenuts until smooth. Add this spice mixture to the tofu and beef mixture.
  3. Combine Ingredients: Add the egg, Masako seasoning, sugar, and salt to the mixture. Mix until all ingredients are well combined.
  4. Wrap in Banana Leaves: Take a piece of banana leaf and place a portion of the mixture onto the center of the leaf. Fold and secure the banana leaf to form a neat package. Repeat with the remaining mixture.
  5. Steam: Place the wrapped packages in a steamer and steam for about 30 minutes or until fully cooked.
  6. Serve: Once cooked, remove the banana leaf wraps and serve the Tum Sapi warm.
