Ayam Bakar Bacem Manis
Ingredients
- Chicken: 1 pack (bought from the market)
- Tempeh: As desired
- For Boiling the Chicken:
- Salt: To taste
- Water: For soaking after being taken out from the freezer
- For the Sauteed Spice Mix:
- Shallots: 6 pieces
- Garlic: 4 cloves
- Candlenut: 1 piece
- Coriander Seeds: 1/2 teaspoon
- Bay Leaves: 3 leaves
- Granulated Sugar: To taste
- Palm Sugar: To taste
- Sweet Soy Sauce: To taste

Preparing the Chicken:
- Take the chicken out of the freezer and soak it in a mixture of warm and regular water. Add a pinch of salt.
- Let it soak for a while, then wash the chicken thoroughly until there is no blood remaining. Cut the chicken into small pieces.

Making the Spice Paste:
- Grind the shallots, garlic, coriander seeds, candlenut, salt, and granulated sugar into a smooth paste.

Cooking the Chicken:
- Heat a pan and sauté the ground spice paste until fragrant.
- Add the chicken pieces, tempeh, bay leaves, and palm sugar to the pan. Add water to cover the chicken and tempeh.
- Mix in the sautéed spice paste, ensuring everything is well coated.

Seasoning and Simmering:
- Add sweet soy sauce according to your preference. Cover the pan and let it simmer.
- Taste and adjust the seasoning if necessary, adding more palm sugar or salt according to your taste.

Grilling or Frying:
- Prepare a grill or frying pan. If grilling, spread butter on the chicken pieces.
- Grill or fry the chicken until it is cooked through and has a nice charred surface.
