Ayam Bakar Bacem Manis

Ingredients

  • Chicken: 1 pack (bought from the market)
  • Tempeh: As desired
  • For Boiling the Chicken:
    • Salt: To taste
    • Water: For soaking after being taken out from the freezer
  • For the Sauteed Spice Mix:
    • Shallots: 6 pieces
    • Garlic: 4 cloves
    • Candlenut: 1 piece
    • Coriander Seeds: 1/2 teaspoon
    • Bay Leaves: 3 leaves
    • Granulated Sugar: To taste
    • Palm Sugar: To taste
    • Sweet Soy Sauce: To taste

Instructions

  1. Preparing the Chicken:

    • Take the chicken out of the freezer and soak it in a mixture of warm and regular water. Add a pinch of salt.
    • Let it soak for a while, then wash the chicken thoroughly until there is no blood remaining. Cut the chicken into small pieces.
  2. Making the Spice Paste:

    • Grind the shallots, garlic, coriander seeds, candlenut, salt, and granulated sugar into a smooth paste.
  3. Cooking the Chicken:

    • Heat a pan and sauté the ground spice paste until fragrant.
    • Add the chicken pieces, tempeh, bay leaves, and palm sugar to the pan. Add water to cover the chicken and tempeh.
    • Mix in the sautéed spice paste, ensuring everything is well coated.
  4. Seasoning and Simmering:

    • Add sweet soy sauce according to your preference. Cover the pan and let it simmer.
    • Taste and adjust the seasoning if necessary, adding more palm sugar or salt according to your taste.
  5. Grilling or Frying:

    • Prepare a grill or frying pan. If grilling, spread butter on the chicken pieces.
    • Grill or fry the chicken until it is cooked through and has a nice charred surface.
