Ingredients:

For Tandoori Mayo Paneer Tikka

  • 400 grams Paneer (Homemade Cottage Cheese), cut into cubes
  • 5 cloves Garlic, grated
  • 2 tablespoons Gram flour (besan)
  • 2 teaspoons Kasuri Methi (Dried Fenugreek Leaves)
  • 1 teaspoon Red Chilli powder
  • 1/4 cup Curd (Dahi / Yogurt)
  • 3/4 cup Del Monte Tandoori Mayo
  • Salt, to taste
  • Oil, for cooking

For the Sandwich

  • 4 Panini Bread, cut in half
  • Iceberg lettuce, shredded
  • 2 Onions, thinly sliced into rings
  • 2 Tomatoes, thinly sliced into rounds
  • 1 Cucumber, thinly sliced into rounds
  • Del Monte Tandoori Mayo, for dressing
  • 1/4 cup Pickled Jalapenos, cut into rounds

Instructions:

  1. Begin by prepping all the ingredients to speed up the cooking process. Set them aside on the counter.

  2. Marinate the Paneer:
    In a large mixing bowl, combine the ingredients listed under “Tandoori Mayo Paneer Tikka.” Toss the paneer cubes well to coat them with the mixture. Taste and adjust salt and seasonings if necessary. Cover and let the paneer marinate for 10-15 minutes.

  3. Cook the Paneer Tikka:
    Heat a teaspoon of oil in a pan over low heat. Add the marinated paneer mixture to the pan. Toss the paneer until it is well-roasted and evenly coated with the Tandoori Mayo masala, maintaining a creamy texture. Once done, turn off the heat and set the paneer aside.

  4. Prepare the Sub Sandwich:
    Slit the panini breads in half, leaving them connected at the joints. Lightly butter the outer sides and toast the bread in the oven (180°C for about 4 minutes) or on a skillet until crisp and golden.

    Lay the toasted bread on a flat surface. Begin by adding cucumber and tomato slices, then sprinkle salt and black pepper on top. Layer shredded lettuce leaves over the veggies.

  6. Add the Paneer Tikka:
    Place the cooked Tandoori Mayo Paneer Tikka on the sandwich. Top with jalapeno rings and sliced onions. Drizzle some extra Tandoori Mayo over the filling.

  7. Serve:
