Description:

An incredibly good, pale salmon-colored vegetable broth originally used to poach halibut. It has many uses though; in any recipe that calls for broth, as a clear soup with crusty bread, as the liquid to cook rice in, as a soup base, etc. If you don’t like tarragon or thyme, switch the herbs. If you’re on the fence, give the thyme and tarragon a try, it’s terrific.

Ingredients:

Quantity Ingredient
2 Carrots
2 Celery ribs
1 Onion
1 Leek
1 Tomatoes
15 Black peppercorns
2 Garlic cloves
3 cups Water
3/4 cup Dry white wine
1/4 cup White wine vinegar
2 sprigs Fresh thyme
1 sprig Fresh tarragon

Instructions:

  1. Preparation:

    • Gather all your ingredients to make sure you have everything you need.
    • Wash and roughly chop the carrots, celery ribs, onion, leek, and tomatoes.
    • Peel the garlic cloves.
  2. Cooking:

    • In a large saucepan, combine the chopped carrots, celery ribs, onion, leek, tomatoes, black peppercorns, garlic cloves, and water.
    • Bring the mixture to a boil over medium-high heat.
  3. Simmering:

    • Once boiling, reduce the heat to low to maintain a gentle simmer.
    • Let the broth simmer uncovered for 45 minutes. This allows all the flavors to meld together beautifully.
  4. Adding Flavor:

    • After 45 minutes, pour in the dry white wine and white wine vinegar.
    • Drop in the fresh thyme sprigs.
    • Continue to simmer for another 15 minutes. Your kitchen will be filled with the most enticing aroma!
  5. Finishing Touch:

    • Remove the saucepan from the heat and stir in the fresh tarragon.
    • Let the broth cool to room temperature. This step helps the flavors to develop even further.
  6. Strain and Store:

    • When the broth has cooled, strain it through a fine-mesh sieve or cheesecloth into a clean container.
    • Press down on the vegetables and herbs to extract all the flavorful liquid.
    • Your Tarragon Vegetable Broth is now ready to use!
  7. Storing:

    • The broth can be used immediately in your favorite recipes, or it can be stored for later use.
    • To store, allow the broth to cool completely before transferring it to an airtight container.
    • Refrigerate the broth for up to 3 days to keep it fresh and delicious.

Serving Suggestions:

  • Use this flavorful broth as a base for soups, stews, and sauces.
  • Enjoy it as a clear soup, garnished with fresh herbs and served with crusty bread.
