Creamy Chicken Soup with Toast

Ingredients:

  • 250 grams chicken breast
  • 1 carrot
  • 1 small head of broccoli
  • 1 potato
  • 2 stalks green onions
  • 2 stalks celery
  • 75 grams grated cheddar cheese
  • 1 onion, sliced thinly
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons cream (I used Fiber Creme)
  • 1 tablespoon cornstarch
  • Unsalted butter, as needed
  • Salt and ground black pepper, to taste

For the Broth:

  • 2 cloves garlic, crushed
  • 2 cm ginger, crushed
  • 500 ml water

For Serving:

  • 2 slices of toasted bread
  • Optional: Garlic bread

Instructions:

  1. Prepare the Chicken: Clean the chicken breast thoroughly and briefly boil it for 10 minutes to remove any impurities. Discard the boiling water. Reboil the chicken with the garlic, ginger, and water to make a flavorful broth. Cook until the chicken is fully cooked, then set aside.

  2. Prepare the Vegetables: Cut the broccoli into florets and soak them in salted water to remove any dirt. Peel and dice the carrot and potato. Finely chop the green onions and celery.

  3. Shred the Chicken: Once the chicken is cooked, shred or dice it into bite-sized pieces. Set aside.

  4. Cook the Base: In a large pot, melt a generous amount of unsalted butter over medium heat. Sauté the sliced onion until fragrant. Season with salt, pepper, and ground nutmeg. Add the grated cheddar cheese and stir until melted and well combined.

  5. Make the Soup: Pour the chicken broth into the pot, making sure to strain it to remove any solid bits. Bring the mixture to a boil.

  6. Add the Vegetables: Once boiling, add the chopped carrot, potato, broccoli, green onions, and celery. Cook for about 2 minutes or until the vegetables are tender but not mushy. Adjust the seasoning with salt and pepper to taste.

  7. Thicken the Soup: Mix the cream and cornstarch with a small amount of water to create a slurry. Stir this mixture into the soup, cooking until the soup thickens slightly.

  8. Combine and Serve: Add the shredded or diced chicken to the soup, stirring to combine. Remove from heat once the chicken is heated through. Serve the soup warm with toasted bread or garlic bread on the side.
