Ingredients:

Instructions:

  1. Prepare the Yeast Mixture: Begin by dissolving 1 1/2 teaspoons of sugar in 1 cup of warm water. Stir well and let the mixture sit undisturbed for about 5 minutes, allowing the yeast to activate and become frothy.

  2. Prepare the Dough Mixture: In a separate bowl, combine 2 teaspoons of salt with 1/2 cup of warm water, mixing until the salt is completely dissolved.

  3. Combine Ingredients: In a large mixing bowl, place 3 cups of flour. Create a well in the center and pour in the activated yeast mixture. Gently mix until combined.

  4. Incorporate the Dough Mixture: Gradually add the salt-water mixture into the flour mixture. Stir until the dough starts to come together.

  5. Knead the Dough: Turn the dough out onto a lightly floured surface and knead until it becomes smooth and elastic. The dough should not be sticky.

  6. First Proofing: Place the kneaded dough into a greased bowl. Cover with a damp cloth and let it rise in a warm place until doubled in size, which should take approximately 1 to 1.5 hours.

  7. Divide and Shape: Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into four equal portions. Roll each portion out into a flat sheet, then divide each sheet into smaller portions, about the size of a large chicken egg.

  8. Form the Buns: Flatten each piece of dough into a circle measuring approximately 5 by 7 cm. Lightly brush each circle with oil. Fold each circle in half, similar to making Parker House rolls but ensuring the halves are equal.

  9. Prepare for Steaming: Place each folded bun onto a piece of greaseproof paper. Arrange the buns spaced apart on trays. Cover the trays with a dry cloth and allow the buns to rise in a warm place for 15 to 20 minutes.

  10. Steam the Buns: Bring a pot of water to a rapid boil and set up a steamer. Carefully place the buns in the steamer basket and steam over the boiling water for 7 to 10 minutes, or until the buns are cooked through and have a soft texture.

  11. Cool and Serve: Remove the buns from the steamer and let them cool slightly. Carefully peel away the greaseproof paper. Open each bun and stuff with the prepared Kong Bak or any filling of your choice. Serve warm and enjoy!
