Keto Balado Hard-Boiled Eggs Recipe

Ingredients:

  • 5 large eggs
  • 1 kaffir lime leaf
  • 2 packets Diabetasol sweetener (or your preferred low-carb sweetener)
  • 1/2 teaspoon chicken bouillon
  • Salt, to taste

For the Spice Paste:

  • 10 red curly chilies
  • 8 small red bird’s eye chilies (adjust to your spice preference)
  • 8 shallots
  • 2 cloves garlic
  • 1 medium tomato
  • 1 teaspoon grilled shrimp paste (terasi)

Instructions:

  1. Prepare the Eggs:

    • Boil the eggs in water until fully cooked. Once done, remove from heat and let cool.
    • Peel the eggs and fry them in hot oil until they turn golden brown. Remove and set aside.
  2. Make the Spice Paste:

    • Blend the red curly chilies, bird’s eye chilies, shallots, garlic, and tomato into a smooth paste.
    • In a pan, heat some oil over medium heat and sauté the spice paste until fragrant and cooked through.
  3. Combine and Simmer:

    • Add 100 ml of water to the pan with the cooked spice paste.
    • Stir in the fried eggs and kaffir lime leaf.
    • Add Diabetasol sweetener, chicken bouillon, and salt to taste.
    • Reduce heat to low and simmer until the eggs are well-coated with the sauce and flavors are absorbed.
  4. Serve:

    • Garnish with additional herbs or spices if desired, and serve hot.
