Stir-Fried Tofu and Mushrooms (Oseng Tahu Jamur)
Ingredients:
- 1/4 kg mushrooms (such as button or shiitake)
- 4 pieces of firm tofu
- 3 shallots
- 4 cloves of garlic
- 3 red chilies
- 7 green chilies
- Palm sugar, to taste
- Sweet soy sauce (kecap manis), to taste
- Seasoning (optional), to taste
- Salt, to taste
Instructions:

Prepare the Mushrooms and Tofu:
- Tear the mushrooms into bite-sized pieces and wash thoroughly.
- Cut the tofu into small cubes and fry until golden brown, but not fully cooked through. Set aside.

Chop the Aromatics:
- Thinly slice the shallots and garlic.
- Slice the red and green chilies into thin rings.

Sauté the Aromatics:
- In a hot pan with a splash of oil, sauté the sliced shallots, garlic, and chilies until fragrant and softened.

Combine Ingredients:
- Add the torn mushrooms and partially cooked tofu to the pan. Stir well to combine with the sautéed aromatics.

Season and Simmer:
- Season with sweet soy sauce, salt, and optional seasoning to taste. Add palm sugar to balance the flavors, adjusting quantities according to your preference.

Cook to Perfection:
- Continue cooking until the mushrooms are tender and have absorbed the flavors, and the tofu is fully cooked.

- Once the mushrooms are soft and the dish is well-seasoned, remove from heat and serve warm.
