Sweet and Spicy Stir-Fried Tofu with Mushrooms

Stir-Fried Tofu and Mushrooms (Oseng Tahu Jamur)

Ingredients:

  • 1/4 kg mushrooms (such as button or shiitake)
  • 4 pieces of firm tofu
  • 3 shallots
  • 4 cloves of garlic
  • 3 red chilies
  • 7 green chilies
  • Palm sugar, to taste
  • Sweet soy sauce (kecap manis), to taste
  • Seasoning (optional), to taste
  • Salt, to taste

Instructions:

  1. Prepare the Mushrooms and Tofu:

    • Tear the mushrooms into bite-sized pieces and wash thoroughly.
    • Cut the tofu into small cubes and fry until golden brown, but not fully cooked through. Set aside.
  2. Chop the Aromatics:

    • Thinly slice the shallots and garlic.
    • Slice the red and green chilies into thin rings.
  3. Sauté the Aromatics:

    • In a hot pan with a splash of oil, sauté the sliced shallots, garlic, and chilies until fragrant and softened.
  4. Combine Ingredients:

    • Add the torn mushrooms and partially cooked tofu to the pan. Stir well to combine with the sautéed aromatics.
  5. Season and Simmer:

    • Season with sweet soy sauce, salt, and optional seasoning to taste. Add palm sugar to balance the flavors, adjusting quantities according to your preference.
  6. Cook to Perfection:

    • Continue cooking until the mushrooms are tender and have absorbed the flavors, and the tofu is fully cooked.
  7. Serve:

    • Once the mushrooms are soft and the dish is well-seasoned, remove from heat and serve warm.
