Sambal Fried Cabbage & Tempeh Delight

Ingredients:

Tempeh (fried) ½ block
Sambal Ingredients:
Garlic (fried) 4 cloves
Shallots (fried) 3 pieces
Bird’s eye chilies (fried) 15 pieces
Shrimp paste (roasted) 1 teaspoon
Salt ½ tablespoon
Palm sugar 1 tablespoon
Powdered broth ½ tablespoon

Instructions:

  1. Preparing the Tempeh:

    • Begin by cutting the tempeh into bite-sized pieces.
    • Soak the tempeh in saltwater for 10 minutes to enhance its flavor.
    • Once soaked, drain and fry the tempeh until golden brown. Set aside.
  2. Preparing the Cabbage:

    • Slice the cabbage leaves lengthwise into strips.
    • Fry the cabbage until it turns a golden brown color. Set aside.
  3. Making the Sambal:

    • In a small pan, fry the garlic, shallots, and bird’s eye chilies until fragrant and softened.
    • In a mortar and pestle or food processor, blend the fried garlic, shallots, and chilies along with the roasted shrimp paste, salt, palm sugar, and powdered broth until it forms a smooth sambal paste. Taste and adjust seasoning as needed.
  4. Combining the Ingredients:

    • In a large mixing bowl, combine the fried cabbage and tempeh.
    • Pour the sambal mixture over the cabbage and tempeh, and gently mash and mix the ingredients together using your hands or a spoon until the sambal thoroughly coats the cabbage and tempeh.
  5. Serving:

    • Serve this spicy, savory delight with hot steamed rice.
