Ayam Geprek Recipe: Crispy Fried Chicken with Spicy Sambal
Ingredients:
- 1/2 chicken (cut into pieces)
- 1 packet of Sajiku flour (spicy version recommended)
- For the sambal:
- 5 shallots
- 3 cloves garlic
- 1 red chili
- 15 bird’s eye chilies
- 1 candle nut
- 1/2 teaspoon black pepper
- Shrimp paste (optional)
- Salt and sugar, to taste
- Cooking oil

- Divide the flour into two portions: one for the wet batter and one for the dry coating. For the wet batter, use cold water to achieve a crispier texture.
- Dip each piece of chicken into the wet batter, ensuring it’s fully coated.
- Then, coat the chicken with the dry flour mixture, pressing lightly to adhere well.

Fry the Chicken:
- Heat oil in a pan over medium heat. Once hot, carefully add the coated chicken pieces.
- Fry the chicken until golden brown and cooked through, ensuring an even cook by turning occasionally.

Prepare the Sambal:
- In a mortar and pestle or food processor, grind the shallots, garlic, red chili, bird’s eye chilies, and candle nut into a fine paste.
- Heat a small amount of oil in a pan over medium heat. Add the ground paste and sauté until fragrant and the oil starts to separate.
- Season the sambal with salt and sugar to taste.

- Once the chicken is crispy and golden, remove from oil and drain on paper towels.
- Gently crush the fried chicken pieces with the back of a spoon or a meat mallet to slightly flatten.
