Description

These Banana Chocolate Chip Muffins have won over even the skeptics! A delightful blend of ripe bananas, rich chocolate chips, and crunchy pecans, they make for a perfect treat any time of day. Originally discovered in a Penzey’s spice catalog, this recipe has become a household favorite, praised for its irresistible taste and moist texture.

Ingredients

  • 1/2 cup butter
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 ripe bananas, mashed
  • 1 cup chocolate chips
  • 1 cup chopped pecans

Instructions

Step Description
1 Grease two 12 cup muffin pans and set aside.
2 Preheat the oven to 350°F (175°C).
3 In a mixing bowl, cream together the butter and sugar until light and fluffy.
4 Add the eggs one at a time, beating well after each addition.
5 Stir in the vanilla extract and mashed bananas until well combined.
6 In a separate bowl, sift together the flour, baking soda, salt, and ground cinnamon.
7 Mix the chocolate chips and chopped pecans into the flour mixture.
8 Gradually add the flour mixture to the bowl with the butter mixture, stirring until just blended.
9 Spoon the batter into the prepared muffin pans, filling each cup about 3/4 full.
10 Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
11 Allow the muffins to cool in the pans for about 5 minutes.
12 Carefully run a dinner knife around the outside of each muffin to loosen it from the pan.
13 Allow the muffins to cool completely in the pans before removing them.
14 If the bottoms are still slightly damp, transfer the muffins to a wire rack to cool completely before wrapping.
15 These muffins freeze well for future enjoyment.
