Ingredients:

  • 1 head of roasted garlic
  • 2 1/2 lbs Yukon Gold potatoes, peeled and cut into chunks
  • 1 1/2 tsp salt, divided
  • 1/2 cup half-and-half
  • 1/2 cup milk
  • 2 tbsp butter
  • 1 tbsp fresh rosemary, finely chopped
  • 1/2 tsp dried rosemary
  • 1/8 tsp white pepper

Instructions:

  1. Prepare Roasted Garlic:

    • Preheat the oven to 350ยฐF (175ยฐC).
    • Cut off the top third of the garlic head to expose the cloves.
    • Place the garlic head on a piece of foil.
    • Drizzle generously with olive oil, sprinkle with salt, and wrap tightly in foil.
    • Roast in the preheated oven for 45 minutes or until cloves are soft and golden. Once cooled, squeeze the cloves from their skins and discard the skins.
  2. Cook Potatoes:

    • Place the potato chunks in a medium saucepan and cover with water.
    • Add 1 teaspoon of salt to the water.
    • Bring to a boil over medium-high heat, then reduce to a simmer.
    • Cook uncovered for 12 to 15 minutes or until potatoes are tender.
    • Drain the potatoes and set aside.
  3. Prepare Milk Mixture:

    • In a small saucepan, combine the half-and-half, milk, butter, and chopped fresh rosemary.
    • Heat over medium-high heat until the mixture simmers and the butter is melted, stirring frequently.
  4. Mash Potatoes:

    • Using a potato masher, mash the cooked potatoes until smooth.
  5. Combine Ingredients:

    • Add the roasted garlic cloves and the milk mixture to the mashed potatoes.
    • Use an electric mixer to beat until the mixture is smooth and creamy.
  6. Season and Serve:

    • Stir in the remaining 1/2 teaspoon of salt and white pepper.
    • Adjust seasoning to taste, if necessary.
