Instructions:

Prepare the Dough:
- In a mixing bowl, combine water, yeast, and half of the flour. Mix for about 2 minutes until well combined. Allow the mixture to stand for at least ten minutes, or until the sponge becomes bubbly (approximately 30 minutes).

Add Oil and Salt:
- Fire up the mixer again, add the olive oil and salt, then gradually add the remaining flour half a cup at a time until the dough starts pulling cleanly away from the sides of the bowl. The amount of flour may vary depending on humidity levels.

Knead the Dough:
- Let the mixer run for another five to six minutes. Then, turn the dough out onto a lightly floured surface and knead it vigorously. Continue kneading until the dough becomes smooth and elastic, and your frustrations melt away.

First Rise:
- Lightly oil the dough and place it in a covered bowl in a warm place until it doubles or increases in volume.

Second Knead:
- Once the dough has risen, turn it out onto a floured surface, punch it down, and knead lightly.

Storage:
- Place the dough in a large storage bag, removing most of the air, and store it in the refrigerator. The dough can be kept for up to a week.

Baking the Pitas:
- Pinch off a piece of dough about the size of a small lemon. Let it warm up, then stretch it out to about nine inches.
- Place the dough on a board and allow it to rise slightly.
- There are two methods for baking the pitas:
- Oven Method: Preheat the oven to 450°F. Place the pita dough on a baking sheet or quarry tiles and bake until it balloons up, approximately three minutes.
- Stovetop Method: Heat a large skillet, preferably cast iron, over high heat until it’s barely smoking. Lightly grease the skillet and place the pita dough gently. Cook for about a minute until bubbles form, then flip and cook until it balloons fully, about three minutes in total.
