Keto Balado Hard-Boiled Eggs Recipe
Ingredients:
- 5 large eggs
- 1 kaffir lime leaf
- 2 packets Diabetasol sweetener (or your preferred low-carb sweetener)
- 1/2 teaspoon chicken bouillon
- Salt, to taste
For the Spice Paste:
- 10 red curly chilies
- 8 small red bird’s eye chilies (adjust to your spice preference)
- 8 shallots
- 2 cloves garlic
- 1 medium tomato
- 1 teaspoon grilled shrimp paste (terasi)

Prepare the Eggs:
- Boil the eggs in water until fully cooked. Once done, remove from heat and let cool.
- Peel the eggs and fry them in hot oil until they turn golden brown. Remove and set aside.

Make the Spice Paste:
- Blend the red curly chilies, bird’s eye chilies, shallots, garlic, and tomato into a smooth paste.
- In a pan, heat some oil over medium heat and sauté the spice paste until fragrant and cooked through.

Combine and Simmer:
- Add 100 ml of water to the pan with the cooked spice paste.
- Stir in the fried eggs and kaffir lime leaf.
- Add Diabetasol sweetener, chicken bouillon, and salt to taste.
- Reduce heat to low and simmer until the eggs are well-coated with the sauce and flavors are absorbed.
