Oven-Baked Ikan Mas Panggang
Ingredients:
- 1/2 kg Ikan Emas (Goldfish)
- 1 lime (for marinating)
- Ground Spice Mix:
- 1 tsp coriander seeds (adjust to taste)
- 3 candlenuts
- 2 large red onions
- 2 large garlic cloves
- A pinch of turmeric powder (optional, adjust to taste)
- Sweet soy sauce (e.g., Bango, to taste)
- Sambal Sauce:
- Sweet soy sauce
- Green chilies (adjust to taste)
- Red onions
- Garlic cloves
- Tomato

Prepare the Fish:
- Remove the innards from the Ikan Emas and wash it thoroughly. Drain well. Squeeze lime juice over the fish and let it sit for 20 minutes to remove any fishy odor.

Prepare the Spice Mix:
- While waiting, grind the coriander seeds, candlenuts, red onions, and garlic cloves into a fine paste. If desired, add a pinch of turmeric powder for extra color and flavor.

Season the Fish:
- After 20 minutes, rinse the fish briefly and pat it dry. Rub the ground spice mix evenly over the fish, making sure it is well-coated. Let the fish marinate for another 15 minutes to allow the flavors to infuse, while preheating your oven.

- Preheat the oven to 180°C (350°F). Place the marinated fish on a baking sheet. Bake for 15 minutes with both top and bottom heat, or until the fish is cooked through and has a golden brown color.

- During the last 10 minutes of baking, brush the fish with a small amount of sweet soy sauce to give it a glossy finish. You may need to bake it for an additional 20 minutes, depending on your oven, to achieve the desired level of crispiness and doneness.

- For a spicy kick, prepare a sambal sauce by blending green chilies, red onions, garlic, and tomato. Mix with sweet soy sauce to taste.

- Once baked to perfection, remove the fish from the oven. Serve hot, optionally accompanied by the sambal sauce for added flavor.
