Ingredients

  • 1 kg beef ribs
  • 2 stalks green onions (daun bawang), chopped
  • 2 sprigs celery (seledri), chopped
  • 4 shallots (bawang merah), thinly sliced
  • 4 cloves garlic (bawang putih), minced
  • 4 orange bird’s eye chilies (cabai rawit orange), sliced
  • 2 tomatoes, chopped
  • 1 packet vegetable soup seasoning (bumbu racik sayur sop)
  • 2 packets Royco seasoning
  • Salt, to taste
  • White sugar, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Beef Ribs:

    • Begin by bringing a large pot of water to a boil.
    • Add the beef ribs to the boiling water. Allow them to cook until they produce foam or scum. Skim off the foam and discard it to ensure a clear soup.
  2. Cook the Beef:

    • Season the beef ribs with black pepper.
    • Continue to cook the beef ribs until they are tender, which may take approximately 1 to 2 hours depending on the size of the ribs.
  3. Prepare Vegetables:

    • While the beef is cooking, slice the shallots, mince the garlic, chop the tomatoes, and slice the orange bird’s eye chilies.
    • Chop the green onions and celery, and set aside.
  4. Combine Ingredients:

    • Once the beef ribs are starting to become tender, add the sliced shallots, minced garlic, chopped tomatoes, and sliced chilies to the pot.
    • Stir in the vegetable soup seasoning (bumbu racik sayur sop) and Royco seasoning. Adjust the seasoning by adding salt and white sugar to taste.
  5. Finish the Soup:

    • Add the chopped green onions and celery to the pot.
    • Allow the soup to simmer for an additional 10 to 15 minutes to let the flavors meld.
  6. Serve:

    • Once the soup has reached the desired flavor and consistency, it is ready to be served.
    • Enjoy your hearty Indonesian beef rib soup with steamed rice or bread, as desired.

This comforting and flavorful Indonesian Beef Rib Soup (Sop Iga Sapi) combines tender beef ribs with aromatic vegetables and spices, creating a delicious and satisfying meal.
