  • 1 package enoki mushrooms
  • 1 egg, beaten
  • 1 cup water

Seasonings:

  • 9 Thai bird chilies, sliced
  • 2 tablespoons sesame oil
  • To taste: oyster sauce
  • To taste: salt and pepper

Instructions

  1. Prepare the Enoki Mushrooms: Begin by trimming off the root ends of the enoki mushrooms. Cut the remaining stems into approximately three equal sections and gently separate them.

  2. Sauté Garlic: Heat the sesame oil in a pan over medium heat. Add the finely chopped garlic and sauté until it becomes fragrant.

  3. Cook the Mushrooms: Add the prepared enoki mushrooms to the pan and stir-fry for about 1-2 minutes. Pour in the water and bring it to a boil.

  4. Add Chili and Seasonings: Stir in the sliced Thai bird chilies. Season with salt, pepper, and oyster sauce to taste.

  5. Incorporate the Egg: Slowly pour in the beaten egg, letting it cook undisturbed for about 1 minute. Gently stir to combine and cook until the egg is set. Adjust seasoning if needed.
