The Goan Style Bebinca, also known as Bibik or Bebinka, is a beloved traditional dessert that embodies the essence of Goan culinary culture. This unique layered pudding, with its distinctive coconut milk and maida (flour) batter, is a true festive treat that graces Goan tables, especially during Christmas. With its seven distinct layers, each made from a combination of coconut milk, malt sugar, date syrup, or even coffee liqueur, this rich dessert is as beautiful as it is delicious. The layers, each carrying its own color and flavor, offer an indulgent experience that’s perfect for any occasion. Despite its intricate preparation, the Bebinca can be made ahead of time, stored for longer periods, and enjoyed cold.

Instructions

  1. Preheat the Oven:
Begin by preheating the oven to 180°C (350°F) and allow it to warm for about 10 minutes.

  2. Prepare the Batter:

    • In a mixing bowl, pour in 300 ml of coconut milk.
    • Add 120 grams of Vivatta Maida (refined flour) and whisk the mixture until smooth, ensuring there are no lumps.
    • Crack two whole eggs into the batter, then add the 1/4 teaspoon of nutmeg and 1 teaspoon of vanilla extract. Whisk again until the batter is smooth and well combined.
  3. Divide the Batter:

    • Divide the batter equally into two separate bowls.
    • In one bowl, add 1 tablespoon of date syrup and whisk it in thoroughly to form a light brown batter.
    • In the other bowl, add 3 teaspoons of confectioners’ sugar and whisk until the sugar is fully dissolved, creating a smooth white batter.
  4. Prepare the Baking Dish:

    • Grease a baking dish with 2 teaspoons of hot, melted ghee to prevent the layers from sticking.
  5. Layering and Baking:

    • Pour 2 ladles of the white batter into the baking dish, spreading it evenly.
    • Bake for 5 minutes or until the layer sets.
    • Remove from the oven, then sprinkle 2 teaspoons of ghee over the baked white layer.
    • Add 2 ladles of the brown batter on top and bake for another 5 minutes.
    • Repeat this process, alternating between the white and brown batters, layering and baking each layer for 5 minutes. Continue until all the batter is used, and the dish reaches the top of the baking dish.
  6. Cool and Serve:

    • Once all layers are baked, allow the Bebinca to cool for a few minutes.
    • Flip the dessert over onto a plate and cut it into small pieces.
  7. Serving Suggestion:

    • Serve the Goan Style Bebinca warm, optionally accompanied by a scoop of vanilla ice cream and a cup of Masala Chai to enhance the experience. This delightful pairing brings out the richness of the Bebinca while offering a perfect balance of flavors.

Additional Tips:

  • Storage: Bebinca can be made ahead of time and stored in an airtight container for up to a week. It is even better when chilled, allowing the flavors to meld.
  • Variations: While date syrup is traditional, you can experiment with other syrups or coffee liqueur to change the flavor profile of the layers.

Enjoy this delightful Goan dessert, a perfect blend of tradition, flavor, and a touch of festive spirit that will surely impress your guests!
